With the frost over, I am especially excited to begin my backyard garden. I'll be getting my hands dirty today. Veggies I'm looking forward to include broccoli, spaghetti squash, eggplant and brussel sprouts. I can't wait to start visiting the Laurel Highlands farmers' markets soon so that I can get some extras for my recipes, like fresh oregano and tomatoes for my home made eggplant parmesan. Instead of baking I am considering a grilled recipe. If anyone has any tips on how to make a great eggplant parmesan on the grill, please let me know.
