The birds are chirping and the bees are buzzing, spring is in the air. Farmers from around the region will soon welcome fresh varieties of spring vegetables and culinary herbs. Vegetable delights will be harvested come summer in time for you to see at farmers’ markets and roadside stands around the region.

    With the frost over, I am especially excited to begin my backyard garden. I’ll be getting my hands dirty today. Veggies I’m looking forward to include broccoli, spaghetti squash, eggplant and brussel sprouts. I can’t wait to start visiting the Laurel Highlands farmers’ markets soon so that I can get some extras for my recipes, like fresh oregano and tomatoes for my home made eggplant parmesan. Instead of baking I am considering a grilled recipe. If anyone has any tips on how to make a great eggplant parmesan on the grill, please let me know.
